Sourdough Blues!

Why isn't my sourdough rising ? When i take it out of the oven it looks like a slightly raised flying saucer!
This has happened twice. The crust is also coming away from the dough as it cools. Could it be the starter, or am i over proving my dough?
Any advice/help please.

What you are referring to is poor oven spring:


One or more causes of low oven spring:
  • Weak starter
  • Improper shaping
  • Over proofed dough
  • Improperly scored
  • No moisture in oven chamber

Thanks for replying. it could be 2 of the 5 suggestions you made. Weak starter or over proofed.
I've discarded my starter (i've had it a while) and will start a new one.

Hi Ceri,

Sourdough has a lot of moving parts, so, as Noracal said, it could be a number of things. But don't worry it can be sorted out.

The observation that the crust is coming away from the dough as it cools is worrying.

What temperature are you cooking it at, for how long, and how large is the dough? You need to get a lot of energy into it quickly during the baking process. I'd like to better understand how you're doing that.
