Sourdough Bread recipe

I am trying to find a good recipe for sourdough bread using a stand mixer. I have made sourdough with the stretch and fold method but i want to use the mixer to speed things up. I like to make the levain the night before and make the dough the next morning but i don't have time to slap stretch fold when i have a mixer?

Hi there! If you want to make sourdough using your stand mixer, here's a quick recipe: Prepare your levain the night before by mixing 100g of active starter with 100g of flour and 100g of water. The next morning, combine 500g of bread flour and 350g of water in your mixer and mix on low for about 2 minutes. Let it rest for 30 minutes, then add the levain and 10g of salt. Mix on low for 4-5 minutes, then medium for another 3-4 minutes until smooth. Let the dough rise for about 4-5 hours, doing a couple of stretch and folds if you can. Shape it, let it rise again in a proofing basket, and bake in a preheated Dutch oven at 450°F for about 30 minutes covered and 15-20 minutes uncovered. Enjoy your sourdough!
