Substitute for Hersheys Dark Cocoa Powder

I have Valrhona Cocoa Powder and King Arthur Flour Black Cocoa Powder. What mixture of the two would be a good substitute for Hershey’s Dark Cocoa Powder?
(I need 35 grams of Hershey’s Dark Cocoa Powder. This is for a frosting.)

They are all alkalized cocoa powders.
Natural cocoa powder is acidic. The pH level is approximately 5.2 and 5.8.

7 is neutral on the pH scale.

Since acidity is not always desirable flavor wise some cocoa powder is treated in an alkalized solution to remove the acidity.


Valhrona cocoa powder is alkalized. alkalized cocoa powders has a pH of 7, which is neutral.

Black cocoa powders are treated with the alkalized solution for longer which takes their pH from neutral to alkaline. they have a pH of 8.

The process of alkalizing changes the color of the cocoa powder.

If you have Valrhona, just use it. it’s a far superior cocoa powder to Hershey.

You honestly don’t need to mix it with any black cocoa powder.

To substitute 35 grams of Hershey’s Dark Cocoa Powder, mix 25 grams of Valrhona Cocoa Powder with 10 grams of King Arthur Flour Black Cocoa Powder. This blend will give you a rich chocolate flavor similar to Hershey’s Dark Cocoa.
