What's your no-fail advice for making amazing homemade bread?

Here are some of mine

!1. Do it when you're angry or frustrated. The kneading will relieve stress and the extra ephasis with which you do it will make the bread better.

2. Don't stress over amounts. If you need more flour add more but if you have the right consistency with less of an ingredient, that's fine too.

3. Bread sounds hollow when its ready. Tap the top, if it sound hollow, you can take it out of the oven.

You will laugh at this one... I grew up on a farm, so it came natural for me. When I was learning to make bread, my mom told me to keep kneading the dough until it felt like a goat's udder!!:p We raised milk goats, and my mom was the main one to milk them. So I guess that's just what she compared the texture to. Hilarious!
