Trouble with Donuts: Tearing and Opening

Hi! I'm having some issues with my donuts. They appear to tear on the side and during frying appear to open... What can it be?

Sounds like it might be no water in the proofer. And Proofer should be at or close to 110 degrees Fahrenheit.

It sounds like your donuts might be tearing and opening up because of a few possible issues. Ensure your dough isn't too dry or too wet—aim for a slightly sticky but manageable consistency. Avoid overworking the dough, as it can make it too elastic. Make sure the dough is well-proofed before frying, and check that your oil temperature is around 350-375°F (175-190°C) to avoid cooking the outside too quickly.
