I'm making 2 tartes for a friend's event with a white chip and cream cheese filling. We decided on the idea of making one tarte more tropical flavors (strawberry, kiwi, mandarin oranges, and canned pineapples) while making the other more berry themed.

I can't decide what combo to make for the berry tarte. Options:
1) all berry : strawberry, blackberry, raspberry
2) Strawberry, blackberry, mandarin oranges
3) Strawberry, blackberry, and canned pineapples

I've made this before with all the tropical fruits, but I worry all berries with raspberries might not be sweet enough.

Thoughts? Which one would you pick?

I used to make fruit tarts at a bakery I worked at.

We didn't do anything to the fruit, except make sure it was cleaned and peeled or pitted.

I did, however, use an apricot glaze over the fruit part of the tart after it had been baked and cooled off.
The apricot glaze gave it a shiny look, as well as sweetened it just a bit, so the fruit wasn't bitter.

You might try that and see how it works for you.
