What Exactly Classify As Pastrys?

I'm not quite sure what classifies as a pastry. I know donuts and cinnamon rolls do but what else goes under this category.

A danish is also a pastry. So is a Napoleon. Pretty much anything flaky with a filling.

It's all about the dough. A basic pastry dough is going to have flour, shortening, eggs, water, and sugar. It's going to be rolled out and used as pie crust, baklava, rugelach, kolaches, etc.

I've always consider donuts and cinnamon rolls to be more similar to cake and bread.
