It uses coconut cream instead of egg. Even my husband loved it and he doesn't usually like coconut. I think the lemon really helps balance out the flavour.
This recipe is also yummy! There is no egg substitute as such, but I think the golden syrup helps maintain the structure:
I'm a vegetarian and don't always like the taste of eggs in different dishes, so I have actually used apple sauce in corn bread and it actually came out pretty good.
