They tasted slightly underproofed,they had 3 hours of proofing.for some reason when I make yeast dough they take longer to proof that I have to proof them longer.
It sounds like your doughnuts just needed a bit more time to proof. Yeast doughs can be slow to rise, especially if your kitchen is cool or the yeast isn't as active. Try letting the dough rise until it doubles in size, even if it takes longer than the recipe says. You could also try proofing in a warmer spot, like a slightly warm oven. If this keeps happening, you might want to check if your yeast is still fresh.
