Scrap donut dough

Ok thanks. Did that but I think the scrap dough smells different the next day. Not yeasty but something sweet like .

Ok. I'll try that . I added ca 20 percent into new mixes. I added even more once to test but they became more heavy and dense I think.

You should try to eliminate as much excess when cutting,
I throw the scrap away, there isn't much, not enough to bother with anyway.

Ok. Very interesting making donuts.Me and the wife had to rethink our business due to corona, found a recipe that we tweaked a little bit and threw is into this.We live in a small town in Norway and have been doing it for three weeks now. I make 400 donuts each day and my wife do the toppings and sells. We have a que around the block when we open 12 pm until we are out of donuts. Its crazy

maybe get some ideas from watching other shops.
