I was interested to make these after Norcalbaker had mentioned them. Hazelnut sandwich cookies filled with dark chocolate. They're absolutely delicious and thank you Norcalbaker for the inspiration! I followed this recipe from Joyce Yvonna.

I blanched and roasted hazelnuts and blitzed them in my food processor. I went out and bought a bag of rice flour. The dough is quite crumbly and a little tricky to work with and hold together, but it was fine. A bit of kneading in the hand first helped with rolling into little balls. A good pinch of salt really important, there's a lovely mild aftertaste of saltiness to enhance the sweetness and the nutty flavour. I'd describe these a bit like a soft shortbread texture. And I got to use my new stainless steel dough cutter for the first time!
