Is there a marble slab someone can recommend for working with chocolate and pastry? Thanks.

the cheap route is visit marble remnant yards and salvage places, when they demolish banks they salvage all the marble sheets (walls) and counters. Sit the slab on a sturdy table.

What would be a minimum size to work on ?

I'd want to cover the whole table and leave it there, picking it up and removing gets old fast, its heavy and fragile, the safest place is flat on the table. I find a stainless steel table works fine.

Any shop that makes countertops will likely have a remnant pile out back of the leftover pieces. One thing to remember about such remnants is the edges have not been finished. When we built our new house a few years ago, the builder offered to give us the cutouts from things like the sink or cooktop openings since he had no use for them. We didn't know to ask and ended up with a useless piece of remnant since the edges were rough sawn and never finished. Make sure to ask them to finish the edges (and how much it would cost) even if choosing a remnant. My impression is a good bit of the cost is the labor/time it takes to finish the edges even on an otherwise worthless remnant.
