Grains in multigrain bread - to soak or not to soak?

I've been using Steve's Kitchen on YouTube to make no-knead dinner rolls with half wheat flour, half bread. Very successful. Now I want to add "X" amount of Bob's Red Mill 5-grain cereal; I need help with the amount, and also, do I then decrease the amount of flour? and last but not least, do I soak the grains beforehand or just put them in with the flour? I've seen recipes both ways. Thanks all!

For adding Bob's Red Mill 5-grain cereal to your no-knead rolls, start with about 1/4 cup of cereal for each cup of flour. Reduce the flour by the same amount of cereal you add to keep the ingredient balance. As for soaking the grains, it's up to your texture preference: soak overnight for softer grains or add them directly for a chewier bite. Experiment with both methods to find what works best for you.
