Hello guys- I would like to share the recipe of Napolitaines which is a famous pastry cake in Mauritius. So, here we go: You will need:
- 250g flour
-2 cups sugar
- 175g Butter
-raspberry/ strawberry jam
- 1-2 tps Rum
- 2 drops of food coloring (you can different colors)
- half cup water at room temperature
- 2 tps lemon juice
- pinch of salt
- vanilla essence
Steps:
1) Sift the flour and salt on to a work surface. Make a well in the center. Add butter, rum and vanilla essence to the well. Use your finger tips in a quick 'pecking' motion to mix together. (you may add more butter if you want to make the mixture softer but DO NOT ADD WATER).
2) As the mixture comes together use both hands to draw in the remaining flour and shape the dough in a ball. Lightly knead the dough until smooth with the heel of your hand. Wrap the dough in plastic wrap and leave it to settle for at least 30 minutes.
3) Roll out the pastry to a thickness of 3-4 mm.
4) Dip a cutter in flour and cut as many rounds as patty cupcakes, re-rolling the dough if necessary .
5) Bake for 30 mins in a 180 degrees Celsius ( please convert for Fahrenheit)until they become beige in color.
6)Allow them to cool. Meanwhile, put sugar and water in a large-heavy base saucepan and heat slowly to dissolve the grains (you can use icing sugar to facilitate your task). Allow to simmer until a thick syrup is obtained.
7) Remove from heat and add your coloring. Here you can divide the syrup into separate containers and add different types of coloring to make different colors. Add the lemon juice to the syrup and beat consistently.
8) Take two biscuit and stick them together with raspberry/ strawberry jam. Then, pour the syrup over the biscuits and allow to cool.
