Perfecting the Cook Time for Strawberry Pie

1lb. fresh Strawberry's
1 cup sugar
1/3 cup Tapioca flour
lemon zest
a pinch of salt
Two 9" store bought pie crust
1 egg yoke
At about 30 min. it want's to boil over the top of my deep Pyrex pan
I do cut holes in my top crust
