Looking for recommendations on the best ones to invest in. Thanks!!!!

I would not recommend a rolling pin. Rather invest in confectionery rulers as they are very versatile. Also called caramel rulers, they are used for dough, ganache, chocolate, caramel, fondant. A rolling pin just doesn’t have any versatility.

For adjustable rolling pins, I recommend the Joseph Joseph Adjustable Rolling Pin for its removable rings and non-stick surface, the Fox Run Adjustable Rolling Pin for its stainless steel build and precise settings, and the KitchenAid Classic Rolling Pin for its durability, though it's not adjustable. Each of these options is well-regarded and should help you achieve consistent dough thickness.
