French Grocery cinnamon rolls

I am trying to find information or a recipe. In Phoenix, AZ off of 7th Ave was a bakery/deli called the French Grocery that made the most amazing cinnamon rolls. Nothing I've made has come close.
What distinguished them was the thinness of the layers and the denseness of the bread, also instead of being sticky inside they seemed to substitute fat for moisture, lard I suspect. Whenever I attempt to make rolls using lard I am not getting the same results and can find no information online about any type of traditional French cinnamon roll.

Any ideas, recommendations or recipes?

if they made croiss or brioche it would be practical for them to use one of those doughs.
brioche would be my choice..
