Madelaines in callebaut, valentines style.

I made 24 of these so far, one more dozen and thats it, a bit too tricky keeping 3 batches of callebaut tempered at the same time.
To keep it all in temper I put it in small plastic tubs in a large toaster oven at 90F.
They look nice at least.

These are beautiful! Did you do the roses by hand?
yes, colored choc in a paper cone bag, its not difficult.
I've done the same thing in silicone molds too but eventually went for 3D roses.

changed my mind and ended up doing these roses instead.
They're faster and look better. They're molded using fake walmart choc.
THe purple one is a crystalized violet petal from amazon.
