I follow a lot of foodies on Pinterest, and found this there. Although it's called a pie, it seems more like a cobbler to me. I love both, so the distinction isn't important to me, but I wanted to point it out to anyone who might care. There's nothing like a nice one or two crust pie, especially when that's what you're used to and are expecting, but cobblers can be easier and quicker to prepare, and there's no rolling out of the crust.

Nanny Pat’s Special Apple Pie
Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Yield: 4 - 6

Ingredients

  • 10 small, 8 med., or 6 huge Apples
  • 1 Tablespoon sugar
  • 1 Teaspoon cinnamon
  • 1 tsp salt
  • 1 cups or 125 g All Purpose / Plain flour
  • 1 1/2 stick / 6 oz or 170 g butter
  • 1 cup or 200 g regular sugar
  • 1 egg
  • 1/2 cup or 55 g chopped nuts - walnuts or pecans
Instructions

  1. Set oven to 350 F, Gas 4, 180 C. Grease your pie dish.
  2. Peel and slice the apples (enough to fill plate 3/4 full). Mix 1 Tbsp sugar & 1 tsp cinnamon in a small bowl, and sprinkle over the apples...
  3. In a saucepan, melt the butter then take off heat. Mix flour, salt and Sugar in a bowl, then add 1 egg, and the melted butter.
  4. Add chopped nuts (walnuts or pecans).Spread batter evenly over the apples.
  5. Bake 30-40 minutes or until golden. Set on a rack (if you can, as I usually have someone cutting into it while piping hot, and not set up.

Cobbler is one of the baked goods that I feel comfortable making - it's so much less intimidating than making a pie crust! Plus I would say the taste is even better too. Peach cobbler is always my favorite but apple sounds pretty good too!

Awesome recipe, it sounds so simple to make and not many ingredients in that list, that makes it a winner in my list :) I bet it tastes amazing, I need to add it to my pins, just to keep it handy. One can never say no to an apple ;)

I make cobbler a lot more than pie, simply because it's so much easier, and I don't have to worry about rolling out the crust, which is sometimes difficult to me, with my hand issues. My favorites are berry and peach cobblers, but I'm sure apple would be great. I make a lot of apple crisps, and they're really easy, as well.

Oh do you have hand issues as well? I had problems with my carpal tunnel (too many video games when I was a teen) :( I also seem to have a problem with my joints... if I over do it with the roller my hands will feel terrible next day, very achy. That is why I don't like to make things like ''buñuelos'' those do hurt the next day :(

Yes, I have whole body issues, which is why I've cut back on my cooking and baking. I also keep a small stool in the kitchen, so I can rest in between tasks. I have a connective tissue disease that affects the connective tissues throughout my body, including my rib cage, as well as other health concerns. Inflammation is a problem, so if you notice yours is spreading throughout your body, have your doctor check to see if that is your issue, as well. Mine started with one diagnosis, then they multiplied, and eventually, the doctor figured out the overarching issue.

Thankfully, I can still be somewhat active, and haven't had to give up cooking and baking entirely. That's why I love recipes like this, because I can still do what I love, without as much resulting pain. I still haven't made it out to the store for apples, but will hopefully get some soon, so I can smell the house up with this or another delicious Fall recipe!

@Diane Lane Oh no! But what is the name of your disease exactly? I'm so sorry to hear you have health issues, my health is not good either... i think I have awful genetics. But yes, I will tell my doctor... I have noticed my knees ache too, lately is my groin (right side), my fingers hurt too! So does my neck, my back sometimes too, but not so much since I started being more active.

Who diagnosed you? Your family doctor? Is it fibro? I sometimes think I have fibro, sometimes I think I might have troubles with gluten and that is why my joints been hurting since I was a kid. No idea, I have gone to so many docs... and still have to see many... more questions than answers :(

Yeah definitely seems more like a cobbler than a pie. Maybe that's why it's a "special" apple pie? LOL Definitely looks like something I could make with my king. GOing on my must try pinboard. lol

It's a connective tissue disease, that's the name of it. A general practitioner or internal medicine doctor actually was able to finally put it together, I saw him at the clinic when I was in graduate school, he wasn't technically my doctor, but I didn't have one at that point. It's different, and in addition to, my Fibromyalgia/Chronic Fatigue. I believe they often co-exist, though, because I've spoken to many who seem to have similar symptoms. Each affected point of connective tissue has a separate diagnosis, so I have a gazillion diagnoses. I've also wondered about food sensitivities / gluten issues. Sometimes activity helps, but other times it hurts, so it's often difficult to determine what to do so that I'll feel better. I hope you're able to get a definitive diagnosis and some good treatment/relief.

That's what I was wondering, as well, @ThatNewMommy, They probably named it that to differentiate it from the regular pies she and others in the family/their circle made. I love fruit dishes, regardless of their form, and will be making some sort of pie/crisp/cobbler soon!

Thanks a lot for sharing, Diane :) But I am very glad at least you got your diagnosis early, at least you are not in the dark right now. I've always thought that it is better to know for sure what is really going on with one's body. Right now to be honest I'm not going to look for answers on this one, since I am already dealing with other serious health issues (neurological), so right now I don't really want to know.

But I might really go after this once I am done with this, thanks for sharing and giving me a clue. Now i know that is the first thing I will ask to whatever specialist I see for this :) I hope you feel better soon, and so sorry to hear you have fibro. I've met some people with it.

You're welcome, @Trellum, I totally understand. We deal with what we can, and set aside the rest. My plate is overfull right now, so I'm ignoring a few things myself. Hopefully your situation will work out, and won't be too serious. Sometimes distracting ourselves with things such as baking, shopping, or creative pursuits can help us cope.

@Diane Lane Right now I am super focused on my exams :) But some days, like for example yesterday, I just didn't feel in the mood to do a thing. Do you ever feel that way? I wonder why does that happen? Could it be that our plate is too full? Maybe we are working too much?
