Need help with baking a cookie for a garden-themed cake

Hi all,
I am making a Birthday cake and decorating it with a garden theme, with a deck chair, rug and book.
I am having trouble getting a cookie to bake in the shape I need to sit in the deck chair. I have made the deck chair out of fondant but wanted a “person” to put in it, as my friend loves ginger, I have done a ginger cake and thought it would look funny if I did a “ginger bread person” to be sitting in the chair.
I am using a gingerbread cookie dough and I formed a deck chair shape out of tin foil for the cookie to bake on, but the cookie keeps ending up looking squished.
Does anyone have any ideas which is the best cookie dough to use and how to or what to use to bake it in the shape I need.
