3d fine moulds

Hi bakers - first time user mere so please be nice.

I purchased a 3d very fine leaves mould maybe 3 millimetres wide at most but have no idea what ingredients to use for them. I’ve tried, tuile mix, isomolt, chocolate, caramel lollies, candy melts, even just plain icing - I just cannot get them out on one piece. Any ideas.

Welcome to the site. I have used tiny moulds and find that if you use moulding paste, or chocolate, dust the mould first with cornflour or light grease with shortening and the leave to harden they come out easier.

For delicate 3D fine molds, I've found success using tempered chocolate, as it contracts and releases easily when cooled. Isomalt works well if cooled completely before demolding, and a light oil spray can help. Gelatin-based mixtures or fondant/gumpaste also work; let them dry a bit before removing and use cornstarch or powdered sugar to prevent sticking. Make sure whatever you use has time to set fully, and chilling in the fridge for a few minutes can make demolding easier. Good luck, and let us know how it goes!
