Silicone moulds for confectionery

Hi,

I make Scottish tablet in shapes. I use mould trays for this but am finding that I can’t get a smooth finish when using silicone moulds. Rubber ones are perfect (see photo)

Any solutions to this?

Try a polycarbonate mold. They are expensive, primarily used in chocolate production, but can be used for other confectionery. Also, make sure you are dissolving the sugar very slowly. And use cane sugar if possible.

How do you pour the tablet (1) not burning yourself? (2) does it pour ok as I thought it would be too thick to pour and (3) does it not set in the pan before you finish pouring
