Anodized aluminium topsy-turvy pans

Hi all. I'm new here, and relatively new to baking!!

Today I tried out these pans (15cm; 20cm; 25cm) for the first time, baking an ordinary sponge with SR flour and a 4egg 8oz; 7egg 14 oz; 9egg 18oz recipe respectively. The recipe said 1 hour; 1.5 hours; 2 hours respectively at 180 degs. (I have a fan oven). The first came out burnt on the sides and had risen in the middle. The second I took out 15 mins early, and it was the same as the first. The third I put in at 150, it's got 15 mins to go and I can see it's risen in the middle but it's not burnt.

Any tips on where I went wrong? I'm thinking it was just the temperature, and perhaps I should have started at 150 - 160? Tx in advance to all you baking brains!

maybe check the oven temp first.
you can bake almost any cake at 350 without burning.
learning how to test cake is better than baking by the clock.
stick a toothpick in the middle, if it comes out clean, its done.

if the recipe calls for 60 minutes , start to test it at 40 minutes, if its done its done.
if not done keep checking every 10 minutes.
