I am making an Italian love cake. I am confused by this statement and why are two dishes needed.

Grease a 5cm-deep, 16cm x 21cm (base) and 21cm x 26.5cm (top) baking dish.

Here are the directions

Preheat oven to 180C/160C fan-forced. Grease a 5cm-deep, 16cm x 21cm (base) and 21cm x 26.5cm (top) baking dish.
Step 2
Whisk cake mix, 2 eggs, 3/4 cup water and oil in a bowl for 1 minute or until combined. Pour mixture into prepared dish.
Step 3
Whisk ricotta, remaining eggs, sugar and vanilla in a separate bowl. Spoon over the centre of cake batter leaving a 1cm border (see notes). Bake for 1 hour to 1 hour 10 minutes or until cake is just firm to touch. Cool for 2 hours.

Reading the instructions, I would conclude the recipe poster made an error by indicating two baking pans. There’s no use for a second pan.

The recipe is talking about one baking dish, not two. The dish has slanted sides, so the base is smaller (16cm x 21cm) and the top is wider (21cm x 26.5cm). You just need to grease this one dish, and the different measurements are because of its shape. Hope that helps!

The recipe uses two dishes for preparation and baking. Grease both dishes, but you'll actually use only the smaller one (16cm x 21cm) for baking the cake batter. The larger dish (21cm x 26.5cm) is likely just for catching any overflow or drips. Mix and pour the cake batter into the smaller dish, add the ricotta mixture on top, and bake. The larger dish is mentioned as a precaution or for convenience.

It sounds like you’re diving into a delicious Italian love cake! The instructions can be a bit confusing, but let me clarify. The recipe calls for two baking dishes to create the unique layered effect of the cake.

  1. Base Dish: This is the smaller dish (16cm x 21cm) where you'll pour the cake batter. It forms the base layer of the cake.
  2. Top Dish: This larger dish (21cm x 26.5cm) is for the ricotta filling. The idea is to spoon the ricotta mixture over the center of the cake batter, allowing it to rise and create a beautiful layered look as it bakes.
The two-dish setup helps keep the ricotta filling from sinking too much into the batter while baking, creating that lovely combination of cake and creamy filling. Just make sure to leave that 1cm border so the filling has room to expand! Enjoy your baking!

It looks like you’re making a delicious Italian love cake! The reason for the two different baking dishes is to create a layered effect with the cake and the ricotta filling.

The first dish (16cm x 21cm) is where you'll pour the cake batter, and the second dish (21cm x 26.5cm) is for the ricotta mixture. When you spoon the ricotta over the cake batter, it’ll create a beautiful layer as it bakes. The larger dish helps to prevent overflow and ensures even baking.

Just make sure to leave that 1cm border around the ricotta so it has space to rise and set properly. Enjoy your baking!
