Chocolate Cake's centers...

So, one thing I noticed with the few chocolate cake recipes I've tried is that the center stays gooey at first when taken out of the oven. (meaning, when I put a toothpick in the center and took it out, it had chocolate on it) In one recipe it said that it would be that way but does this go for all chocolate cakes?

In recipes other than that certain recipe, I put it back in the oven for about 3-5 more minutes and take it out and leave to cool.

It really depends on the recipe. I'd say that for most regular chocolate cakes, you would want the toothpick to come out clean. Fudgier chocolate cake recipes may be better if it's slightly undercooked though, but it depends on personal preference :)

I've never had that happen to my chocolate cakes, unless I was making one with a "molten" center on purpose.
