Chocolate chip cookies!

Any body else LOVE using chocolate chip cookies to make icecream sandwiches? These sandwiches are one of my favorite easy desserts.

Everyone seems to be making these now, although I've never come across them before. When I was a kid we used to have something similar but they were called 'icebergs'; it was a rectangular slab of ice cream sandwiched between two biscuits. I might try making some of these some time.

I like making these myself because the ones in the store are far to big. I don't want a huge icecream sandwich so I make the cookies on the small size and then sandwich with icecream. You can also make the cookies a little less sweet so that the sugar is not overwhelming.
