how soon can I prepare my stuffed bread?

I am baking stuffed bread for tonight, I also need to go to the shopping centre with my daughter for her school trip tomorrow. The bread will be eaten at 9.30 when we break our fast. If I prepare the bread dough and get back at just pop the prepped stuffed dough in the oven at 8.30 would that be ok?
How soon can I prepare the dough?
