How to estimate number of desserts to prepare for farmers markets and similar events

Hi friends!

I was wondering if you can tell me how you calculate the number of desserts you estimate are needed to bake and prepare for events such as farmers markets and the like where you're a vendor so sell unpackaged desserts, pre-packaged desserts and also provide tasting samples.
