what do you call those little cards that pastry chefs put on their pastries?

Those little cards are called "food labels" or "pastry labels." They're often used by pastry chefs to add a touch of elegance and provide information about the pastry, like the name or ingredients. They can be a nice way to personalize and present the pastries in a more refined

I had those in my bakery, printed on a choc disk, edible.
Google edible food label, you can have your logo artwork done and label made up or they can make you choc transfer sheets for DIY.
Also, try stampified, they might have a solution for you.
