Airbrush mirror glaze

I'm making a mango inspired entremet. The event will be shaped like a mango and covered with a yellow mirror glaze. Is like to add some red and green highlights like you'd see on an actual mango. Is it possible to airbrush these colors on top of a mirror glaze? Will it blend okay? Will the food dye make the mirror glaze leach moisture? Looking forward to your input.

Absolutely, you can airbrush red and green highlights on top of your mirror glaze! Use gel or powder food colors mixed with a bit of alcohol for best results. Apply the colors when the glaze is set but still slightly tacky. Test on a small area first to make sure the colors adhere well. Just avoid over-saturating to prevent moisture issues. Your mango-shaped entremet sounds delicious and visually stunning—good luck!
