Banana ideas?

Does anybody have any suggestions for things OTHER THAN banana bread to use banana in?

I'm familiar with using it as a substitute for things like oil, eggs, etc. (and have had varying degrees of success, haha) but I would like more baking recipes that feature banana prominently and center stage.

You could try making Banana cue, though the bananas you use there are called Sabas. Basically you just sprinkle them with brown sugar and you fry them, giving them a sweet and crunchy golden looking layer, then you serve them by inserting it on a stick. You could also make banana ice cream.

The plantain is a delicious fruit in the banana family that has so much potential in Spanish cooking. I love fried platanos! They are sweet and delicious, and can be eaten as a side with dinner, or as a dessert. Simply cut the plaintain lengthways, cut away the peel, and fry the elongated slices in a pan of hot oil until they're golden brown all over. Let them sit on a paper towel to dry off excess oil, and they're ready to eat.

You can try to make banana fritters, which is a deep fried banana recipe.

Ingredients:

1 2/3 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons confectioners' sugar
1/4 teaspoon salt
2/3 cup milk
1 egg
3 bananas, mashed and sprinkled with 1 teaspoon lemon juice to keep from discoloring
oil for deep frying
confectioners' sugar

Preparation:

Measure, sift and mix all dry ingredients. Whisk together the milk and egg; add to dry ingredients. Fold in the mashed bananas. If too thick add a little milk, and if batter seems too thin, add flour. Batter should have consistency to mound up in a spoon. Heat deep fryer to about 375° or add 1 inch of oil to a deep skillet or kettle and use a deep fryer thermometer to check tempperature. When fritters will cook in 5 minutes, the oil is ready. Drop by spoonfuls in small batches. As fritters brown on one side turn. Drain on paper towels. Keep warm and just before serving sprinkle with cinnamon sugar or powdered sugar.
