I’m new here. Does anyone know the going rate to charge for a lemon sponge with strawberries & cream ?

there is none, google your local area for a typical cake of the same size, flavor isn't important.
and in the end its all in the "sell".

I made french wedding cakes for 400,
home bakers can sell wedding cakes from boxed mix for thousands, they are skilled at the sell.
