I have really taken an interest in gluten free baking lately because everything that I've tasted is fantastic. Are there any wonderful gluten free baked goods you would like to share with everyone?
Here's an almond orange cake. I think this makes 6.
12 Oranges
300 g Brown Sugar
200 g Caster Sugar
36 Eggs
1500 g Ground Almond Meal
9 tsp Baking Powder
Cream topping, filling
500 g Mascarpone Cheese
3 Tbs heavy Cream
Take oranges and simmer in water for 30 minutes or until peels get really soft. Remove from water.
Blend in food processor until it becomes a paste.
Combine everything together and mix.
Bake 160 C until centers set.
For the cream filling/ topping. Whip the cream until soft peaks. Fold into Mascarpone cheese.

I do not have any diet concerns, but I have tried so many gluten free baked goods lately that taste amazing that I thought I would start removing gluten from my life. I am not sure what the differnce is exactly, but maybe the gluten free goods taste a little less bready?
I checked a gluten free chocolate cake recipe just the other day, it sounded really great! I'd actually like to give a gluten-free diet a try, I suspect I might suffer from celiacs, but I'm not entirely sure tho..
