Flakemeal biscuits

I am trying to make gf flakemeal biscuits with sweetener and gf oats but every recipe I try gives me soft biscuits and I want a crunch. Using xanthum gum and baking powder and xylitol sweetener.

Any suggestions would be most welcome.

To get crunchier gluten-free flakemeal biscuits, try using a blend of gluten-free flours with some almond or coconut flour, which can help with texture. Reduce the xanthum gum slightly or substitute with guar gum, and bake the biscuits a bit longer at a lower temperature to crisp them up. Adding chopped nuts or seeds can also boost crunchiness, and make sure to use cold butter to help with texture. If xylitol isn’t giving you the crunch you want, consider mixing it with a bit of coconut sugar.
