No-bake Cookies

I absolutely hate my electric stove, which in Arizona is too hot to use anyway. I usually end up burning whatever I put in it. I've only had luck with muffins, and the item I've burned the worst were cookies. Do any of you make no-bake cookies? What kind do you make? I'd love to hear your recipes!

I've been making rice krispy treats lately. My boyfriend wanted me to try it with the Cinnamon Toast Crunch cereal this last time. I think I've made them with fruity Cheerios a while back. Not a big fan of apricots, but the Oatmeal Peanut Butter bars sound so good!

I've never tried such a thing. I hardly knew they existed until now. How can you make cookies that aren't baked? (I meant physically, how is it possible and why would you not need to bake them?)
