Sugar cookie recipe called for 2 eggs and I only added one. I made 2 logs of dough already to chill. Will the dough be ok or should I try to add another egg?

if you have a toaster oven just pop a sample in to bake and find out.
You might get away with it...or not, the proof is in the result.

Since you've already made the dough, it's best to go ahead and chill it as planned. Sugar cookie dough can be pretty forgiving, so it might still work out fine with just one egg. However, the cookies might turn out slightly less soft and might not spread as much. If you’re worried, you could try adding another egg to the dough if it seems too dry or crumbly. Just mix it in thoroughly and chill again if needed.
