Tips for Perfect Homemade Donuts

Hello all I am making donuts.

Firstly when I am using instant yeast around 11g

When I fry the donuts I am getting bubbles on each one like a big air pocket what is causing this?

Secondly it feels like when they have been cut they don’t rise much the 2nd time at all.

Can anyone help with any of this?
