I am looking for advice on my fudge recipe, no matter what I do it just won't set firm, it's allways far too soft (to the point you can squish it in your fingers).
Here is my recipe:
397g Condensed mil
Milk 150ml
Soft brown sugar 450g
Butter 115g
I always melt the mixture fully, bring to the boil until it reaches at least 115c, leave it to cool for 5 mins, then beat it to hell!
Any tips appreciated as it's driving me mad, having tried 5 times :-(
