A Coffee Collection

Ever since I got pregnant, I've given up a lot of things. Admittedly, most of them were for my own good and even after I give birth I don't think I'll be putting them back in my diet. There's one thing I miss dearly though, and that is coffee.

I was an absolute coffee nut way back when, and I did cut back even before I met my husband-to-be. Now with the restriction specifically on caffeine, and with the due date getting nearer and nearer, it's like I can't stop thinking about having a cuppa. I'm even dreaming about the stuff. And decaf? It's a terrible, terrible prank played on poor caffeine-deprived pregnant women.

In honor of this, I'd like to know your favorite coffee-rich recipe. This could be either sweet or savory. Give me something to look forward to after the pregnancy!

Oh this is fun! I am a coffee nut too but recently went off because of a diet I have been doing. My favorite's are endless, from Caramel Macchiato to Coffee Italian Ice. However, if I were to speak strictly in the baking category, I would have to say is a cake I had once that called for coffee in it. So it wasn't a 'coffee cake' but a coffee cake. haha I don't have the recipe though. But one of my favorite sites called the Pioneer Woman has a recipe that looks similar: http://thepioneerwoman.com/cooking/2009/08/coffee-cake-literally/ I think the recipe I tried had chocolate/coffee frosting though but this one looks like vanilla and you can see the crystals of coffee in it! Doesn't it look fantastic?? I have 10 days to go until my diets over. I think I will be going on a coffee vacation! Happy daydreaming!

I will just die. That looks like the most amazingly coffee-licious cake ever! And look how much coffee goes into it! Heaven, just heaven, I tell you.

This looks kind of interesting. I've never tried this before. It's a creamy coffee pie garnished with coffee beans. I sometimes eat coffee beans, so I don't mind them as a garnish.

That is interesting how it uses gelatin! Thanks for the link, I will definitely try this as soon as I get the instant coffee crystals. Although I found this recipe on how to make your own instant coffee crystals and it does not look that difficult to do: http://www.ehow.com/how_5108920_make-own-instant-coffee.html I have not tried it yet, but am planning on trying it this fall.
