Adding peanut butter?

I have a recipe for banana muffins that I have been using for years but want to try making peanut butter and banana muffins - any advice on how to make sure they are still the right consistency? I’m not much of an experimenter so don’t have a lot of background to go on!

Welcome to the forum! :)

First of all, that sounds like an awesome idea. Peanut butter is around 50% fat, so if you were to just add it in you'd probably find that the muffins would be a lot oilier. So if I were you I'd decrease your fat a little to compensate. It would be helpful to see your recipe, can you share it here?

This is the recipe I use: https://fatmumslim.com.au/chocolate-banana-bread-recipe/ but I make muffins instead of a loaf. It does have a decent amount of butter in it so I could definitely decrease that to account for the peanut butter. Thanks!

Sounds like a good plan :) Something else worth bearing in mind is that you could also drizzle some peanut butter on the top, yummy!
