I'm looking at a Viennese ingredient list for a cake and I see the terms "cocoa moss" and "raw Marzipan moss". Is "moss" equivalent to paste ?

It looks like "moss" in this context is a term for "paste." So, "cocoa moss" means "cocoa paste," and "raw Marzipan moss" means "raw Marzipan paste." It's just a regional way of describing these ingredients in their paste form.
