I came up with this recipe after being challenged to make a martini cupcake by my husband. I actually have quite a few cocktail-based cupcake recipes floating around, I'll post them as I dig them up!
Bond's Cupcakes
In 'Casino Royale', James Bond invents and names his classic drink, the Vesper Martini; 'Three measures of Gordon's, one of vodka, half a measure of Kina Lillet.' You can read more about it here~
As is typical with alcohol-based cakes, the frosting carries more flavor, but the cake itself has a nice, subtle martini taste if you eat it alone. Not too light but not in-your-face and without that crazy 'Why does anybody drink gin?!' taste. This recipe takes a bit of time, but is really worth it!
Vesper Martini
3 parts Tanqueray Gin
1 part Vodka
1.2 part Lillet Blanc
Combine ingredients (usually over ice, but in this case we do not need the ice). Shake well, strain. You will need two for this recipe, three if you want one for yourself
Martini Cupcakes
6 Tbl Butter, softened
1/2 Tsp Almond Extract
1/2 Cup Sugar
2 Eggs
1 Cup Self-Rising Flour
1 Vesper Martini
Beat butter, almond extract, and martini till mixed- the combination may look separated, but continue on. Add sugar, combine well mixing in low speed. Add in half of flour, then one egg, then the rest of the flour, and the last egg. Increase speed to medium and beat until mixture is well combined.
Divide mixture into 12 standard muffin cups. Bake 18 minutes @ 350°
Martini Sugar Syrup - Optional, but highly recommended
1 Vesper Martini
Sugar
Combine and stir sugar into the martini mix until dissolved. Using a bamboo skewer or toothpick, poke holes through cakes. Drizzle syrup over cakes and into poked holes. Let dry.
Lillet Buttercream Frosting
6 Tbl butter, softened
1 Cup Powdered Sugar
1-2 Tsp Lillet Blanc
Approx. 3-4 Tbl Martini Syrup
Beat butter, martini syrup, and Lillet until light and fluffy. Beat in sifted powdered sugar in two batches.
Decorate cupcakes, and enjoy!
