Carrot pie

If you like pumpkin pie, you will love carrot pie. I use any pumpkin pie recipe, but instead of adding pumpkin, I add cooked, pureed carrots. The first time I made it (due to an abundance of carrots) we held our breath as the first person tasted it.

The verdict was unanimous. No more pumpkin pie in this family, they always ask for carrot pie now.

That sounds awesome. I've also heard of zucchini cake instead of carrot cake and zucchini pie instead of pumpkin pie. It's amazing what people come up with when they have an abundance of produce.

Especially if you are cook that views cookbooks as interesting reading and a 'jumping off' point. My biggest problem is people are always asking for recipes, and I mostly just put 'some of this' and 'some of that' in unless I'm in the mood for "something else", and my measuring cups mostly just sit in the drawer ignored.

Wow this soound amazing. This is the type of heathy change I would keep to myself. I would bake it and just let folks eat and nevr tell them, oh by the way you are eating carrot pie. Carrot tarts could be great for a party.

If you don't tell them they are eating carrot pie they will never know it, all they will know is that you make the very best pumpkin pie they ever had. I like the idea of tarts, think I'll have to do that next time I'm responsible for treats at my card making classes.

I love carrots, but I have never heard of carrot pie. I'm not a fan of pumpkin pie. I prefer sweet potato pie during the holiday season. I am definitely going to try this because of my love of carrots. Very soon.

I've never tried carrot pie, but I do love pumpkin pie, (it's actually my favorite) so I would definitely consider giving carrot pie a try!

I do this often as well! Depending on what I have at home I just substitute one for the other. Both are great for deserts and have somewhat the same consistency when cooked.

My grandmother used to make it and it reminds me so much of the childhood. I have always been so excited to eat it becase it's not like other pies and it tastes different, but at the same time very good. I hope I'll find a good recipe to try to bake it on my own.

Carrot pie recipe is easy.. use any pumpkin pie recipe you like and just substitute cooked, mashed carrots for the pumpkin.

I've been so busy in the garden I haven't had time to bake for the past week. One more week of planting (lots of carrots) and weeding and I should be able to take time off and head back into the kitchen.

I have never heard of carrot pie, but I love carrot cake so I can imagine this would be delicious! I believe I am going to go to the store tonight and get the ingredients for this recipe. I was itching for some sweets today, so this is right up my alley. Thanks for the tip :D

I have never tried a carrot pie, I can only imagine what it tastes like, but I would not mind trying it out.

Man, I sure love myself some pumpkin pie! Perhaps I should try carrot pie too. People think that vegetable pies taste bad, but they're wrong! They actually taste good, if not, better than fruit pies! They're especially good when you add cinnamon and other great spices too it. I've tried pumpkin pie before, but I haven't tried carrot pie. Anyone know where I can buy it? Or does anyone have the recipe?

I've never heard of carrot pie, but I love pumpkin. My daughter is a carrot lover. She always want to eat cooked carrots, so this sounds like the perfect surprise pie to make her. I bet she will love it.
