Cashew cookies

I remember to have tasted cashew cookies when my husband was still courting me before. But it was a long time ago and I cannot find the same cookies in bakeshops. My husband doesn't remember where he bought that box of cookies. I am saying this because one of my aunts who is diabetic is hinting on cashew cookies when we gave her fresh cashew nuts, it was the creamy variety that everyone here loves. And now I have this problem of finding those cashew cookies.

Have you tried replicating them with another nut cookie recipe? Cookies with almond bases are especially popular, but replacing the almonds for cashews could give you a base to work from.

What sort of cookies were they like texture-wise? Thin and crisp? Thick like biscotti? Soft and chewy?

It's so hard trying to recreate something that was store bought sometimes - especially if it was something from years ago! I've had times where I feel like I've over glamorized the taste/memories of something, because it's just been so long since I last ate it!

I think Fae is on point with her advice - what kind of texture cookies were they? Someone may have a good cashew cookie recipe to share that you could play around with?

You definitely should use some facebook groups or pages in order to find some information about whereto find those, seems like you really want to taste them again and I know the feeling, believe me. Just try a little bit harder.

I do love cashews, but I cannot really say that I have ever heard of them in a cookie, but I am very intrigued now and I think I need to expand my horizons a bit. I am hoping kind of a mix between nutty and sweet....sounds good though.

It has a picture of the finished cookies too.

It's from Land O Lakes, so it's real butter... that means it has to be good right? With brown sugar and cashews? And, they're frosted.

Yeah, this might not be the same as what you're looking for, but I'm pretty sure these would have to be good!
