Do I bake muffins with roasted or unroasted pumpkin seeds?

I assume they will roast while the muffin is baking so I am better with unroasted seeds.

Do I assume correctly?

No, seeds and nuts should be lightly toasted before added to a quick muffin batter. The muffin only bakes for a very short time, and the moisture in the batter will keep seeds and nuts soft.


Some seeds like flax and chia will absorb moisture, and become slimy and act as a thickener, so they should be toasted before adding to a batter.

When adding seeds to bread, then soak as they will absorb water. This keeps the hydration in check, and helps keep them pliable so less risk of tearing the gluten network during shaping.
