The best thing I have found, at least for buttercream frosting is to stick it in the fridge for a little while before trying to use it. I tried to frost a cake right after making the frosting and all it did was run everywhere. I gave up before getting too frustrated and decided to stick it in the fridge and walk away for awhile. I came back after about 30 minutes and it spread much better!
If you dip your knife in to cold water while spreading your frosting will go on smoother. Don't forget to crumb coat you cake before putting on the nice coat of frosting.
