I and my family currently working overseas, helping with labour and sex trafficking. I am a baker and a cake decorator. My question for today is, has anyone here work with fondant in a humid place with no AC what so ever? I am having a hard time teaching my girls. Issues are, Fondant sweat a lot, when I try to make flowers they tear very easily and they get elephant skin. we make our own fondant and we buy local brand too. Help us if you have any tips or heat resistant fondant or sugar paste recipe, please. One more question, do you all know about the rice paste or wafer papers (edible)? Thanks a lot.
