Pie dish

Hi. I usually bake my pies in a glass pie dish so I can check to see if the bottom is golden. I do tend to have to leave it in longer but it eventually browns. First question- if anyone else prefers glass, do you place it on the bottom rack? I usually just set it in the middle. Also, for anyone else who has used different types of pie pans, do you prefer a metal pan and feel secure in knowing it is browned or do I need to cross my fingers. I was thinking of trying a new pie dish to experiment with them. Thanksgiving is in three days so I don't think I'll switch for this holiday but I have another pie in mind for Christmas. Thank you!

I usually use a glass pie dish and keep it in the middle of the oven, which seems to work well for even baking. If the bottom isn't browning enough, you might try preheating the dish. For different types of pans, metal tends to brown the bottom more reliably, but ceramic can work well too if you’re okay with a longer baking time. I completely get where you're coming from with wanting that perfect golden crust. I usually bake my pies in metal pans, and I've found they tend to brown more evenly compared to glass. With metal pans, I often place them on the bottom rack, which helps the bottom crisp up nicely.

That said, glass dishes can be great for checking the bottom of the crust, as you mentioned. If you stick with glass, maybe try placing it on the lower rack to see if that helps with the browning. Just keep an eye on it to avoid over-baking.
