how retired baker makes 4 loaves of pumpkin date bread(cake).
Its a 5 minute project. Very moist recipe.
The smaller molds were baked after 50 minutes, bigger ones took another 15 mins.
Just stick a small knife in, when it comes out clean its done.
drizzle the lemon icing after they come out, I apply it while they're still hot.
recipe below.
as per the video, all these dry ingredients go in one bowl.
baking soda 2 tsp
baking powder 1 1/2 tsp
salt 1 tsp
cinn 2 tsp
nutmeg 1/2 tsp
all purpose flour 1 lb 4 oz
no need to sift anything, its a batter not a sponge.
in the mixer
sugar 1lb 8 oz
oil 1 and 3/4 cups veg oil.
eggs 5
pumpkin 1lb 13 oz can.
vanilla if you want.
chopped dates soaked for 5 minutes in warm water, as much as you like or non if you don't want them.
