Hi, I am from Germany living in the USA and been baking on and off when I got a craving for proper bread. My results have been pretty OK.
But what I have been trying to replicate and haven’t been able to are real Brötchen. I cannot get the crust right and can’t seem to figure out the secret. I’ve tried basting with milk for the last 5 minutes and what not but to no avail.

Does anyone know how to achieve this (attached image)? Or got a complete recipe?

thanks

To achieve that perfect Brötchen crust, try this simple method: Mix 500g bread flour, 300ml lukewarm water, 7g yeast, 10g salt, 10g sugar, and 25g softened butter. Knead the dough for 10 minutes, let it rise for 1 hour, then shape into small rolls and let them rise for another 30 minutes. Bake in a preheated oven at 220°C (430°F) for 15-20 minutes. For a crispy crust, place a dish of water in the oven to create steam and ensure your oven is well-preheated.
